It’s human nature. So rare is sunshine during British summertime, that anytime we feel the mercury rising above freezing it’s a mad dash to any place that will elevate us that little bit higher to the heat we so desperately crave. And a place that also facilitates a drink is a must.

And our new destination of choice? St Paul’s, obviously. Barbadian rum brand Mount Gay have collaborated with scenic Madison Rooftop Terrace to bring us a taste of the Caribbean with the “Time Well Spent” bar – ‘cos drinking a cocktail on a rooftop is, well, time well spent.

On offer, as well as incredible views of the iconic backdrop of St Paul’s, is one heavenly cocktail menu. Curated by bar manager Eduard Balan (formerly Aqua Shard), the limited edition Mount Gay menu features the Madison’s unique twist on classic concoctions. 

First up, a refreshing Caribbean Aperitivo, followed by the smoky twist on the classic, the Roasted Pina Colada, created using Mount Gay Black Barrel, coco lopez, rice water and smoked pineapple. For something to appease the sweet tooth, we have the Timeless Strawberry Mojito, formulated with Mount Gay Black Barrel, supasawa colourless strawberry syrup, mint tincture and topped with water. And to finish it off, the dreamy Barrel Aged Rum Old Fashioned made using Mount Gay XO, and aged in a Port oak barrel.
