Cheese and wine is fine, bubbles and oysters are grand, but the winning combination has to be steak and Birra Moretti. Luckily for us, Wonderland were treated to a steak master class, washed down with Italy’s finest beer: Moretti. Upon arrival at Forza Win, the restaurant of our dreams, located near everyone’s favourite multi-venue, the Bussey Building in Peckham, we were lucky enough to be offered a variety of Moretti’s famous beers to choose from, including the traditional La Authentic and the hangover-inducing (super-strength but delicious) La Rossa.
After a beverage (or two), Forza Win Owner Bash Redford and Mark Parr took us to the kitchen, ready to begin our Steak 101 master class. Talking us through the various parts of the perfect steak making process, which is quite a bit more complicated that it first seems, they gave us the full lowdown on how to cook the best steak, no matter how rare or well-done you like it. Starting off with telling us how the coal was formed (more interesting than it sounds), to how the steak meat is matured, we then ventured into cutting and grilling our own, even massaging the salt into it. Masterchef here we come!
After cooking our steaks to perfection, making sure not to leave unsightly grill marks (this ain’t a backyard BBQ, y’know), we took our cuts off the flame, added lashing of salsa verde (consisting of equal parts parsley, basil and mint with generous glugs of premium olive oil and lemon juice) – an essential element in any steak supper – and came together on communal tables to share the goodies: washed down, of course, with plenty of Birra Moretti. Buon appetito! Oh, and whatever you do, don’t smother your lovingly prepared steak in ketchup at Forza Win. It’s tantamount to heresy.
